Classic Granola

I started making my own granola after hearing someone say, “If you want to absorb your vitamins better, eat foods that naturally contain them.” That really stuck with me. Pumpkin seeds, for example, are packed with essential minerals like magnesium, zinc, iron, and manganese. This granola recipe is not only delicious and satisfying but also naturally rich in vitamins B and E, making it a wholesome way to start the day.

Dietary Info: Vegan, gluten-free if using certified oats, refined sugar-free

Ingredients 

  • 1 cup Whole Almonds 
  • 1 cup Pecans 
  • 1 cup Dried Cranberries 
  • 1/2 cup Pumpkin Seeds 
  • 1/2 cup Desiccated Coconut 
  • 1/4 cup Flax Seeds 
  • 1/4 cup Sunflower Seeds 
  • 1/4 cup Sesame Seeds 
  • 1 tsp Kosher Salt 
  • 1 tsp Cinnamon 
  • 1/2 tsp Nutmeg 
  • 3 tbsp melted Coconut Oil 
  • 2 tbsp Stevia or Raw Honey
  • 1 tsp Vanilla Extract 

Instructions 

  1. Preheat oven to 190°C (375°F). Line a baking sheet with parchment. 
  2. Mix all dry ingredients in a large bowl. 
  3. Whisk oil, stevia, and vanilla. Pour over the dry mix and toss. 
  4. Spread evenly on the sheet and bake for 23 minutes. 
  5. Cool completely before storing.
