Breakfast Cookies 

These healthy breakfast cookies are naturally gluten-free, vegan, and low in sugar – think of them as a granola bar, but without the processed stuff. Made in one bowl and ready in just 30 minutes, they’re the perfect grab-and-go snack. Double the batch and freeze them for an easy, on-the-go meal prep win.

Ingredients 

  • 3 Ripe Bananas (about 3/4 cup mashed) 
  • 1/2 cup Almond or Natural Peanut Butter 
  • 1/4 cup Real Maple Syrup or Raw Honey 
  • 2 cups Rolled Oats 
  • 1/2 cup Pumpkin Seeds 
  • 1/2 cup Dranberries, Dark Chocolate Chips, or Blueberries 
  • 1/4 cup Chia Seeds 
  • 1 tsp Cinnamon 
  • Coarse Salt for topping (a good quality Celtic sea salt)

Instructions 

  1. Preheat oven to 350°F (175°C). 
  2. Mash bananas and mix with nut butter and syrup. 
  3. Stir in oats, seeds, nuts, cinnamon, and salt. 
  4. Shape the dough into cookies and place them on a baking sheet. 
  5. Bake for 25–30 minutes, or until golden. 
  6. Sprinkle with coarse salt
